Description

A delightful vegan dish featuring firm tofu, sun-dried tomatoes, and creamy coconut sauce, perfect for impressing family and friends.


Ingredients

  • 1 block of firm tofu
  • 2 tablespoons olive oil
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup coconut cream (dairy-free substitute)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 8 ounces gnocchi
  • Fresh basil for garnish

Instructions

  1. Press the tofu to remove excess water and cut into bite-sized cubes.
  2. Heat olive oil in a skillet over medium heat.
  3. Add the tofu cubes and cook until golden brown on all sides, about 8-10 minutes.
  4. Mix in sun-dried tomatoes, garlic powder, onion powder, Italian seasoning, salt, and pepper in the skillet.
  5. Pour in coconut cream and simmer for about 5 minutes to thicken.
  6. Cook gnocchi according to package instructions.
  7. Add drained gnocchi to the skillet and toss to coat with tofu and sauce.
  8. Serve hot, garnished with fresh basil.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently to maintain texture.
