Ingredients

- 1 block of firm tofu
- 2 tablespoons olive oil
- 1 cup sun-dried tomatoes, chopped
- 1 cup coconut cream (dairy-free substitute)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 8 ounces gnocchi
- Fresh basil for garnish
Instructions
- Press the tofu to remove excess water and cut into bite-sized cubes.
- Heat olive oil in a skillet over medium heat.
- Add the tofu cubes and cook until golden brown on all sides, about 8-10 minutes.
- Mix in sun-dried tomatoes, garlic powder, onion powder, Italian seasoning, salt, and pepper in the skillet.
- Pour in coconut cream and simmer for about 5 minutes to thicken.
- Cook gnocchi according to package instructions.
- Add drained gnocchi to the skillet and toss to coat with tofu and sauce.
- Serve hot, garnished with fresh basil.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently to maintain texture.
