  • 1 lb boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onions and minced garlic, and sauté until fragrant.
  2. Add the chicken breasts and cook until lightly browned on both sides.
  3. Stir in the diced carrots and celery, cooking for about 3-4 minutes to soften.
  4. Pour in the chicken broth and diced tomatoes. Bring the mixture to a boil.
  5. Lower the heat, cover the pot, and let it simmer for 20-25 minutes or until the chicken is fully cooked.
  6. Remove the chicken from the pot, shred it, and return it to the soup.
  7. Stir in the heavy cream, fresh spinach, and Italian seasoning. Season with salt and pepper to taste.
  8. Serve hot, topped with freshly grated Parmesan cheese.

Notes

For a quicker prep, use rotisserie chicken or for a vegetarian option, swap chicken broth with vegetable broth.
