- 1 lb boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onions and minced garlic, and sauté until fragrant.
- Add the chicken breasts and cook until lightly browned on both sides.
- Stir in the diced carrots and celery, cooking for about 3-4 minutes to soften.
- Pour in the chicken broth and diced tomatoes. Bring the mixture to a boil.
- Lower the heat, cover the pot, and let it simmer for 20-25 minutes or until the chicken is fully cooked.
- Remove the chicken from the pot, shred it, and return it to the soup.
- Stir in the heavy cream, fresh spinach, and Italian seasoning. Season with salt and pepper to taste.
- Serve hot, topped with freshly grated Parmesan cheese.
Notes
For a quicker prep, use rotisserie chicken or for a vegetarian option, swap chicken broth with vegetable broth.
