Description

A rich and moist chocolate cake that is perfect for any celebration, featuring layers of decadent chocolate frosting.


Ingredients

  • 1 1⁄2 cups granulated sugar
  • 3⁄4 cup unsweetened cocoa powder
  • 1 1⁄2 teaspoons baking powder
  • 1 1⁄2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk (or almond milk for dairy-free)
  • 1⁄2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1⁄2 cup unsalted butter, softened
  • 2⁄3 cup unsweetened cocoa powder
  • 3 cups powdered sugar
  • 1⁄3 cup whole milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla to the dry ingredients. Mix on medium speed for about 2 minutes until well blended.
  4. Carefully stir in the boiling water; expect a thin batter.
  5. Evenly distribute the batter into your prepared pans.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
  8. For the frosting: Beat the softened butter until creamy. Gradually mix in cocoa powder, powdered sugar, milk, and vanilla, beating until fluffy.
  9. Once the cakes have cooled, stack them. Spread a layer of frosting on top of the first layer, then place the second layer on top and frost the top and sides of the cake.
  10. Add chocolate shavings or colorful sprinkles for decoration, slice, and enjoy!

Notes

For added flavor, consider adding a pinch of espresso powder to the dry ingredients or layering with fruit preserves.
