Description

A comforting and flavorful meatloaf that combines ground beef with fresh herbs and spices, perfect for family dinners.


Ingredients

  • 2 lbs ground beef (85% or 80% lean)
  • 1 medium onion (1 cup), finely chopped
  • 1 tsp olive oil
  • 2 large eggs
  • 3 garlic cloves, minced
  • 2 Tbsp ketchup
  • 3 Tbsp fresh parsley, finely chopped
  • 3/4 cup Panko breadcrumbs (or gluten-free bread crumbs)
  • 1/3 cup milk
  • 1 tsp salt (or to taste)
  • 1 tsp Italian seasoning
  • 1/2 tsp ground black pepper
  • 3/4 cup ketchup (for glazing)
  • 1 ½ tsp white vinegar
  • 2 Tbsp brown sugar
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Instructions

  1. Preheat your oven to 350°F and line a rimmed baking sheet with parchment paper or foil.
  2. In a medium skillet over medium heat, add the olive oil and chopped onion. Sauté for about 5-7 minutes until softened and golden. Remove from heat and set aside to cool.
  3. In a large mixing bowl, combine all the meatloaf ingredients along with the cooled onions. Mix gently until just combined.
  4. Transfer the mixture to the prepared baking sheet and shape it into a loaf, approximately 8 inches long, 4 inches wide, and 3 inches tall.
  5. Bake uncovered for 40 minutes.
  6. While the meatloaf bakes, mix together the glaze ingredients in a small bowl.
  7. After 40 minutes, spread the glaze over the meatloaf and return it to the oven. Bake for an additional 20 minutes, or until the internal temperature reaches 160°F.
  8. Let the meatloaf rest for 10-15 minutes before slicing.

Notes

Try serving with creamy mashed potatoes or roasted vegetables for a complete meal.
