- 2 lbs ground beef (85% or 80% lean)
- 1 medium onion (1 cup), finely chopped
- 1 tsp olive oil
- 2 large eggs
- 3 garlic cloves, minced
- 2 Tbsp ketchup
- 3 Tbsp fresh parsley, finely chopped
- 3/4 cup Panko breadcrumbs (or gluten-free bread crumbs)
- 1/3 cup milk
- 1 tsp salt (or to taste)
- 1 tsp Italian seasoning
- 1/2 tsp ground black pepper
- 3/4 cup ketchup (for glazing)
- 1 ½ tsp white vinegar
- 2 Tbsp brown sugar
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Instructions
- Preheat your oven to 350°F and line a rimmed baking sheet with parchment paper or foil.
- In a medium skillet over medium heat, add the olive oil and chopped onion. Sauté for about 5-7 minutes until softened and golden. Remove from heat and set aside to cool.
- In a large mixing bowl, combine all the meatloaf ingredients along with the cooled onions. Mix gently until just combined.
- Transfer the mixture to the prepared baking sheet and shape it into a loaf, approximately 8 inches long, 4 inches wide, and 3 inches tall.
- Bake uncovered for 40 minutes.
- While the meatloaf bakes, mix together the glaze ingredients in a small bowl.
- After 40 minutes, spread the glaze over the meatloaf and return it to the oven. Bake for an additional 20 minutes, or until the internal temperature reaches 160°F.
- Let the meatloaf rest for 10-15 minutes before slicing.
