- 1 red onion, thinly sliced
- 1 cup plain Greek yogurt
- 1/2 cup feta cheese, crumbled
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Fresh parsley for garnish
Instructions
- In a mixing bowl, combine the olive oil, dried oregano, garlic powder, salt, and pepper. Add the chicken thighs, ensuring they are well-coated. Marinate for at least 30 minutes.
- Heat a skillet over medium-high heat. Cook the marinated chicken for 5-7 minutes on each side until golden brown and internal temperature reaches 165°F (75°C).
- In a separate bowl, mix Greek yogurt, crumbled feta cheese, lemon juice, minced garlic, salt, and pepper to make the tzatziki. Blend until smooth.
- Remove the cooked chicken from heat, let it rest for a few minutes, then slice into strips.
- Spread tzatziki on each pita bread, add sliced chicken, cherry tomatoes, diced cucumber, and red onion. Roll the pita tightly to enjoy.
