Description

A vibrant stir fry featuring tender chicken and colorful veggies, perfect for a quick weeknight dinner.


Ingredients

  • 1.5 lbs boneless & skinless chicken breasts (cut into bite-sized pieces)
  • 3 tbsp extra virgin olive oil (divided for cooking)
  • Salt and black pepper (to taste)
  • 2 medium zucchini (sliced into half-moons)
  • 2 red bell peppers (diced into chunks)
  • 1 large red onion (sliced into strips)
  • 2 cups cherry tomatoes (halved)
  • 1 cup Kalamata olives (pitted and halved)
  • 4 cloves garlic (minced)
  • 1/4 cup sun-dried tomatoes (chopped)
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • Juice of 1 lemon
  • 0.5 cup feta cheese (crumbled)
  • 2 tbsp fresh parsley (optional garnish)

Instructions

  1. Prep your ingredients: Chop everything and have it ready.
  2. Heat 2 tablespoons of olive oil in a large pan over medium-high heat.
  3. Add the chicken pieces, season them with salt and pepper, and cook until golden and fully cooked (about 5-7 minutes). Remove and set aside.
  4. In the same pan, add the remaining tablespoon of olive oil. Sauté the onion and garlic for about 1-2 minutes until fragrant.
  5. Add the zucchini, bell peppers, cherry tomatoes, and sun-dried tomatoes. Stir and cook for another 4-5 minutes.
  6. Return the cooked chicken to the pan, add oregano, basil, and thyme. Toss everything together until well combined.
  7. Drizzle the lemon juice, add olives and feta cheese, then gently toss to mix.
  8. Top with fresh parsley if desired and enjoy.

Notes

Great served with crusty bread or couscous. Can be stored in an airtight container in the fridge for up to 3 days.
