A vibrant stir fry featuring tender chicken and colorful veggies, perfect for a quick weeknight dinner.
Ingredients

- 1.5 lbs boneless & skinless chicken breasts (cut into bite-sized pieces)
- 3 tbsp extra virgin olive oil (divided for cooking)
- Salt and black pepper (to taste)
- 2 medium zucchini (sliced into half-moons)
- 2 red bell peppers (diced into chunks)
- 1 large red onion (sliced into strips)
- 2 cups cherry tomatoes (halved)
- 1 cup Kalamata olives (pitted and halved)
- 4 cloves garlic (minced)
- 1/4 cup sun-dried tomatoes (chopped)
- 2 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp dried thyme
- Juice of 1 lemon
- 0.5 cup feta cheese (crumbled)
- 2 tbsp fresh parsley (optional garnish)
Instructions
- Prep your ingredients: Chop everything and have it ready.
- Heat 2 tablespoons of olive oil in a large pan over medium-high heat.
- Add the chicken pieces, season them with salt and pepper, and cook until golden and fully cooked (about 5-7 minutes). Remove and set aside.
- In the same pan, add the remaining tablespoon of olive oil. Sauté the onion and garlic for about 1-2 minutes until fragrant.
- Add the zucchini, bell peppers, cherry tomatoes, and sun-dried tomatoes. Stir and cook for another 4-5 minutes.
- Return the cooked chicken to the pan, add oregano, basil, and thyme. Toss everything together until well combined.
- Drizzle the lemon juice, add olives and feta cheese, then gently toss to mix.
- Top with fresh parsley if desired and enjoy.
Notes
Great served with crusty bread or couscous. Can be stored in an airtight container in the fridge for up to 3 days.
