  • 2 medium zucchinis, sliced into half-moons
  • 2 red bell peppers, diced into chunks
  • 1 large red onion, sliced into strips
  • 2 cups cherry tomatoes, halved
  • 1 cup Kalamata olives, pitted and halved
  • 4 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • Juice of 1 lemon
  • 0.5 cup feta cheese, crumbled
  • 2 tbsp fresh parsley, optional garnish

Instructions

  1. Prep Your Ingredients: Ensure everything is chopped and ready.
  2. Sear the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken, season with salt and pepper, and cook until golden and cooked through, about 7-8 minutes. Remove and set aside.
  3. Sauté the Veggies: In the same skillet, add the remaining olive oil. Sauté the onions and garlic until fragrant, then add the zucchinis, red bell peppers, and cherry tomatoes, cooking until they begin to soften.
  4. Combine Everything: Return the chicken to the skillet. Stir in the sun-dried tomatoes, olives, oregano, basil, and thyme. Toss well to combine.
  5. Finish Off: Remove from heat and stir in the lemon juice and crumbled feta.
