Description

Quick and flavorful Mediterranean Chicken Stir Fry featuring tender chicken and vibrant vegetables, seasoned with garlic and herbs.


Ingredients

  • 1.5 lbs Chicken breasts, boneless & skinless (Cut into bite-sized pieces)
  • 3 tbsp Extra virgin olive oil (Divided for cooking)
  • Salt & black pepper (To taste)
  • 2 medium Zucchini (Sliced into half-moons)
  • 2 Red bell peppers (Diced into chunks)
  • 1 large Red onion (Sliced into strips)
  • 2 cups Cherry tomatoes (Halved)
  • 1 cup Kalamata olives (Pitted and halved)
  • 4 cloves Garlic (Minced)
  • 1/4 cup Sun-dried tomatoes (Chopped)
  • 2 tsp Dried oregano
  • 1 tsp Dried basil
  • 1/2 tsp Dried thyme
  • 1 Lemon (Juice only)
  • 0.5 cup Feta cheese (Crumbled)
  • 2 tbsp Fresh parsley (Optional garnish)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Season the chicken pieces with salt and black pepper. Add them to the skillet, cooking until they are golden and fully cooked through (about 5-7 minutes). Remove the chicken and set aside.
  3. In the same skillet, add the remaining olive oil. Sauté the onion and garlic until fragrant.
  4. Toss in the zucchini, red bell peppers, cherry tomatoes, and sun-dried tomatoes. Cook until the veggies are tender, around 5-6 minutes.
  5. Return the chicken to the skillet, along with dried oregano, basil, and thyme. Toss to combine everything evenly.
  6. Drizzle with fresh lemon juice, and fold in the Kalamata olives and crumbled feta cheese. Mix well, and serve immediately.

Notes

Serve over couscous or quinoa, or atop a mixed green salad. Garnish with fresh parsley.
