- 1 ½ pounds boneless, skinless chicken breasts, cut into chunks
- 3 medium zucchinis, sliced into rounds
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Juice of 1 lemon
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¾ cup shredded mozzarella or Italian cheese blend
- ¼ cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the chicken pieces and zucchini rounds with olive oil, minced garlic, lemon juice, oregano, basil, salt, and black pepper until well coated.
- Spread the chicken and zucchini mixture evenly in a 9×13-inch baking dish.
- Generously sprinkle mozzarella and Parmesan cheese over the entire top.
- Bake uncovered for 25-30 minutes, or until the chicken is fully cooked and the cheese is golden and bubbly.
- Garnish with fresh parsley just before serving.
Notes
For a richer flavor, you can substitute chicken thighs for chicken breasts. You can also add roasted red peppers, Kalamata olives, or artichoke hearts for a creative twist.
