Description

Ingredients

  • 1 ½ pounds boneless, skinless chicken breasts, cut into chunks
  • 3 medium zucchinis, sliced into rounds
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup shredded mozzarella or Italian cheese blend
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken pieces and zucchini rounds with olive oil, minced garlic, lemon juice, oregano, basil, salt, and black pepper until well coated.
  3. Spread the chicken and zucchini mixture evenly in a 9×13-inch baking dish.
  4. Generously sprinkle mozzarella and Parmesan cheese over the entire top.
  5. Bake uncovered for 25-30 minutes, or until the chicken is fully cooked and the cheese is golden and bubbly.
  6. Garnish with fresh parsley just before serving.

Notes

For a richer flavor, you can substitute chicken thighs for chicken breasts. You can also add roasted red peppers, Kalamata olives, or artichoke hearts for a creative twist.
