  • 1 cup mozzarella cheese (shredded)
  • 1/2 cup Parmesan cheese (grated)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
  2. In a large mixing bowl, combine the chicken breasts, sliced zucchini, halved cherry tomatoes, thinly sliced red onion, and minced garlic.
  3. Drizzle the mixture with olive oil and sprinkle all seasonings over the top. Toss until evenly coated.
  4. Spread the chicken and vegetable mixture evenly across the prepared baking dish, ensuring the chicken doesn’t overlap.
  5. Sprinkle mozzarella and Parmesan cheeses generously over the top.
