  • 3 medium zucchinis, sliced into rounds
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Juice of 1 lemon

  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup shredded mozzarella or Italian cheese blend
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss chicken and zucchini with olive oil, garlic, lemon juice, oregano, basil, salt, and pepper in a large bowl until well-coated.
  3. Spread the mixture evenly into a 9×13-inch baking dish, then top with shredded mozzarella and Parmesan cheese.
  4. Bake uncovered for about 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  5. Garnish with fresh parsley before serving hot.
