Description

  • 3 medium zucchinis, sliced into rounds

  • 2 cloves garlic, minced

  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup shredded mozzarella or Italian cheese blend
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the chicken and zucchini with olive oil, minced garlic, lemon juice, oregano, basil, salt, and pepper until well coated.
  3. Spread the mixture evenly in a 9×13-inch baking dish, ensuring even distribution for even cooking.
  4. Sprinkle the mozzarella and Parmesan cheese generously over the top.
  5. Bake uncovered for 25-30 minutes, or until the chicken is thoroughly cooked and the cheese is bubbly and golden.
  6. Garnish with fresh parsley before serving.
