Ingredients

  • 1 pound ground chicken
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped (red or green)
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • Juice of half a lemon

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the ground chicken and cook for about 6-8 minutes, breaking it apart with a spoon until it’s browned.
  3. Stir in the chopped onion and minced garlic, sautéing for 2-3 minutes until the onion turns translucent.
  4. Add the bell pepper, oregano, smoked paprika, cumin, salt, and pepper. Cook for an additional 3-4 minutes until the bell pepper softens slightly.
  5. Mix in the halved cherry tomatoes and sliced olives, allowing them to cook for about 5 minutes.
  6. Sprinkle the crumbled feta cheese over the mixture, letting it melt slightly.
  7. Remove the skillet from heat and stir in the fresh parsley and lemon juice.
  8. Taste and adjust seasoning if necessary. Serve warm.

Notes

Pair with cauliflower rice or a cucumber salad for a complete meal. This dish stores well in the fridge for up to 4 days or can be frozen for 2-3 months.
