Ingredients

- 4 flour tortillas
- 1 cup fresh spinach, chopped
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato, diced
- 1/4 cup red onion, thinly sliced
- 1 tablespoon olive oil
- Black pepper to taste
Instructions
- In a mixing bowl, combine the mozzarella, feta cheese, spinach, diced tomato, red onion, and black pepper. Mix until well combined.
- Lay one tortilla flat on a clean surface and place one-fourth of the filling on one half of the tortilla.
- Fold the tortilla over to cover the filling.
- Heat a non-stick skillet over medium heat and add olive oil.
- Place the filled tortilla in the skillet and cook for about 3-4 minutes until golden brown.
- Carefully flip and cook for an additional 3-4 minutes until both sides are crispy.
- Once cooked, remove from heat, slice into wedges, and serve warm.
Notes
These quesadillas can be served with a Mediterranean salad, tzatziki, or grilled veggies for a complete meal. For storage, refrigerate in an airtight container for up to 3 days or freeze them.
