Description

Delightful Mediterranean Quesadillas packed with spinach, feta, mozzarella, and red onion, perfect for quick dinners or lunches.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato, diced
  • 1/4 cup red onion, thinly sliced
  • 1 tablespoon olive oil
  • Black pepper to taste

Instructions

  1. In a mixing bowl, combine the mozzarella, feta cheese, spinach, diced tomato, red onion, and black pepper. Mix until well combined.
  2. Lay one tortilla flat on a clean surface and place one-fourth of the filling on one half of the tortilla.
  3. Fold the tortilla over to cover the filling.
  4. Heat a non-stick skillet over medium heat and add olive oil.
  5. Place the filled tortilla in the skillet and cook for about 3-4 minutes until golden brown.
  6. Carefully flip and cook for an additional 3-4 minutes until both sides are crispy.
  7. Once cooked, remove from heat, slice into wedges, and serve warm.

Notes

These quesadillas can be served with a Mediterranean salad, tzatziki, or grilled veggies for a complete meal. For storage, refrigerate in an airtight container for up to 3 days or freeze them.
