Delicious Mediterranean quesadillas filled with spinach, feta, mozzarella, and sweet red onion, perfect for a quick meal or brunch.

- 4 flour tortillas
- 1 cup fresh spinach (chopped)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato (diced)
- 1/4 cup red onion (thinly sliced)
- 1 tablespoon olive oil
- Black pepper (to taste)
Instructions
- In a mixing bowl, combine shredded mozzarella, crumbled feta, chopped spinach, diced tomato, sliced red onion, and black pepper. Mix well.
- Take one flour tortilla and lay it flat. Place one-fourth of the filling mixture onto half of the tortilla and fold the other half over.
- Heat a non-stick skillet over medium heat, adding olive oil to coat the bottom.
- Place the filled tortilla in the skillet and cook for 3-4 minutes until golden brown.
- Flip the quesadilla and cook for another 3-4 minutes on the other side.
- Remove from skillet, slice into wedges, and serve warm.
Notes
Serve with a side salad and tzatziki sauce for an enhanced Mediterranean experience. Leftovers can be stored in the refrigerator for up to 3 days or frozen for later.
