Description

Delicious Mediterranean quesadillas filled with spinach, feta, mozzarella, and sweet red onion, perfect for a quick meal or brunch.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. In a mixing bowl, combine shredded mozzarella, crumbled feta, chopped spinach, diced tomato, sliced red onion, and black pepper. Mix well.
  2. Take one flour tortilla and lay it flat. Place one-fourth of the filling mixture onto half of the tortilla and fold the other half over.
  3. Heat a non-stick skillet over medium heat, adding olive oil to coat the bottom.
  4. Place the filled tortilla in the skillet and cook for 3-4 minutes until golden brown.
  5. Flip the quesadilla and cook for another 3-4 minutes on the other side.
  6. Remove from skillet, slice into wedges, and serve warm.

Notes

Serve with a side salad and tzatziki sauce for an enhanced Mediterranean experience. Leftovers can be stored in the refrigerator for up to 3 days or frozen for later.
