Description

Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. In a mixing bowl, combine the shredded mozzarella, crumbled feta, chopped spinach, diced tomato, sliced red onion, and a sprinkle of black pepper. Mix everything well.
  2. Place one tortilla flat on a surface and spoon one-fourth of your filling mixture onto one half.
  3. Fold the tortilla over to enclose the filling.
  4. Heat a non-stick skillet over medium heat, adding the olive oil once warm.
  5. Place the folded tortilla in the skillet. Cook each side for about 3-4 minutes until they are golden brown.
  6. Carefully flip it over and cook the other side for another 3-4 minutes until crispy.
  7. Remove the tortilla from the skillet, slice into wedges, and serve warm.

Notes

Serve with tzatziki sauce or a fresh salad. Customize the filling with ingredients like grilled chicken or pepper jack cheese.
