Mediterranean Quesadillas

Description

Delicious quesadillas filled with spinach, feta, and mozzarella, perfect for a quick weeknight meal.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. In a mixing bowl, combine mozzarella cheese, feta cheese, chopped spinach, diced tomato, thinly sliced red onion, and black pepper. Mix thoroughly.
  2. Lay one tortilla flat and scoop one-fourth of the filling mixture onto half of the tortilla. Fold it over to encase the filling.
  3. Heat a non-stick skillet over medium heat and add the olive oil.
  4. Place the folded tortilla in the skillet and cook for 3-4 minutes until golden brown.
  5. Flip the quesadilla carefully and cook the other side for another 3-4 minutes until both sides are crispy.
  6. Remove from heat, slice into wedges, and serve warm.

Notes

Try serving with tzatziki sauce or a fresh salsa for added flavor. Store leftovers in the refrigerator for up to 3 days.
