Delicious quesadillas filled with spinach, feta, and mozzarella, perfect for a quick weeknight meal.
Ingredients

- 4 flour tortillas
- 1 cup fresh spinach (chopped)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato (diced)
- 1/4 cup red onion (thinly sliced)
- 1 tablespoon olive oil
- Black pepper (to taste)
Instructions
- In a mixing bowl, combine mozzarella cheese, feta cheese, chopped spinach, diced tomato, thinly sliced red onion, and black pepper. Mix thoroughly.
- Lay one tortilla flat and scoop one-fourth of the filling mixture onto half of the tortilla. Fold it over to encase the filling.
- Heat a non-stick skillet over medium heat and add the olive oil.
- Place the folded tortilla in the skillet and cook for 3-4 minutes until golden brown.
- Flip the quesadilla carefully and cook the other side for another 3-4 minutes until both sides are crispy.
- Remove from heat, slice into wedges, and serve warm.
Notes
Try serving with tzatziki sauce or a fresh salsa for added flavor. Store leftovers in the refrigerator for up to 3 days.
