Description

Delicious Mediterranean Quesadillas filled with creamy feta, gooey mozzarella, and fresh spinach, perfect for a quick and satisfying meal.


Ingredients

  • 4 Flour tortillas
  • 1 cup Fresh spinach, chopped
  • 1/2 cup Shredded mozzarella cheese
  • 1/2 cup Crumbled feta cheese
  • 1 small Tomato, diced
  • 1/4 cup Red onion, thinly sliced
  • 1 tablespoon Olive oil
  • Black pepper, to taste

Instructions

  1. Combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, sliced red onion, and a sprinkle of black pepper in a mixing bowl. Mix until everything is well combined.
  2. Lay one flour tortilla flat on your work surface and place one-fourth of the filling mixture on one half of the tortilla. Fold the tortilla over to encase the filling.
  3. Heat a non-stick skillet over medium heat and add the olive oil.
  4. Carefully place the folded tortilla in the skillet. Cook for about 3-4 minutes, or until the bottom is golden brown.
  5. Flip the quesadilla over gently and cook for another 3-4 minutes until both sides are crispy and golden.
  6. Remove from the skillet, slice into wedges, and serve warm.

Notes

For extra crispiness, ensure the skillet is hot enough before adding the quesadilla. Don’t overfill to avoid spills when flipping!
