Description

Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato, diced
  • 1/4 cup red onion, thinly sliced
  • 1 tablespoon olive oil
  • Black pepper, to taste

Instructions

  1. Combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, sliced red onion, and a pinch of black pepper in a mixing bowl.
  2. Lay one tortilla flat on a clean surface and place one-fourth of the filling mixture on half of the tortilla.
  3. Fold the tortilla over to cover the filling.
  4. Heat a non-stick skillet over medium heat and add the olive oil.
  5. Place the filled tortilla in the skillet and cook for about 3-4 minutes until it turns golden brown.
  6. Flip the quesadilla carefully and continue to cook for another 3-4 minutes until both sides are crispy.
  7. Remove from the heat, slice into wedges, and serve warm.

Notes

For a kick, add chopped jalapeños or crushed red pepper flakes. Try brushing tortillas with olive oil for extra crispiness.
