- 4 flour tortillas
- 1 cup fresh spinach, chopped
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato, diced
- 1/4 cup red onion, thinly sliced
- 1 tablespoon olive oil
- Black pepper, to taste
Instructions
- Combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, sliced red onion, and a pinch of black pepper in a mixing bowl.
- Lay one tortilla flat on a clean surface and place one-fourth of the filling mixture on half of the tortilla.
- Fold the tortilla over to cover the filling.
- Heat a non-stick skillet over medium heat and add the olive oil.
- Place the filled tortilla in the skillet and cook for about 3-4 minutes until it turns golden brown.
- Flip the quesadilla carefully and continue to cook for another 3-4 minutes until both sides are crispy.
- Remove from the heat, slice into wedges, and serve warm.
Notes
For a kick, add chopped jalapeños or crushed red pepper flakes. Try brushing tortillas with olive oil for extra crispiness.
