Ingredients

- 4 flour tortillas
- 1 cup fresh spinach (chopped)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato (diced)
- 1/4 cup red onion (thinly sliced)
- 1 tablespoon olive oil
- Black pepper (to taste)
Instructions
- In a mixing bowl, combine the shredded mozzarella, crumbled feta, chopped spinach, diced tomato, sliced red onion, and a pinch of black pepper. Mix well to blend all the flavors.
- Lay one tortilla flat on a clean surface. Place one-fourth of the filling mixture on one half of the tortilla and fold the other half over to cover it.
- Heat a non-stick skillet over medium heat and add the olive oil.
- Carefully place the filled tortilla in the skillet and cook for about 3-4 minutes until golden brown.
- Flip the quesadilla carefully and cook for another 3-4 minutes until both sides are crispy and browned.
- Remove from the skillet, slice into wedges, and serve warm.
Notes
Serve with tzatziki sauce or a refreshing cucumber salad. Leftovers can be stored in an airtight container for up to 3 days or frozen for 2 months.
