Description

Delightful Mediterranean quesadillas filled with spinach, feta, mozzarella, and red onion, making any meal feel special.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. In a mixing bowl, combine the shredded mozzarella, crumbled feta, chopped spinach, diced tomato, sliced red onion, and a pinch of black pepper. Mix well to blend all the flavors.
  2. Lay one tortilla flat on a clean surface. Place one-fourth of the filling mixture on one half of the tortilla and fold the other half over to cover it.
  3. Heat a non-stick skillet over medium heat and add the olive oil.
  4. Carefully place the filled tortilla in the skillet and cook for about 3-4 minutes until golden brown.
  5. Flip the quesadilla carefully and cook for another 3-4 minutes until both sides are crispy and browned.
  6. Remove from the skillet, slice into wedges, and serve warm.

Notes

Serve with tzatziki sauce or a refreshing cucumber salad. Leftovers can be stored in an airtight container for up to 3 days or frozen for 2 months.
