- 1 lb sirloin steak
- 3 tbsp olive oil
- 2 garlic cloves (minced)
- 1 cup cherry tomatoes (halved)
- 1 cucumber (diced)
- 2 cups cooked grains (like brown rice, quinoa, or cauliflower rice)
- 1 cup Greek yogurt (plain)
- Fresh herbs (parsley or dill)
Instructions
- Marinate the steak: In a bowl, mix olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Add the steak, coating it thoroughly. Cover and refrigerate for at least 30 minutes.
- Make the tzatziki: In a separate bowl, mix Greek yogurt with grated cucumber, lemon juice, minced garlic, chopped dill, salt, and pepper. Chill until ready to use.
- Cook the steak: Heat a skillet over medium-high heat. Cook the marinated steak for 4–5 minutes on each side or until it reaches your desired doneness. Let it rest for a few minutes before slicing it thinly.
- Assemble the bowl: Layer cooked grains as the base. Top with sliced steak, cherry tomatoes, and diced cucumber. Drizzle generously with tzatziki sauce.
Notes
These bowls can be served fresh or stored for later. Add feta cheese for flavor or serve with a green salad.
