Ingredients

Scale
  • 2 pounds beef stew meat
  • 45 green chiles (like poblano or hatch)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • Salt and pepper, to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat.
  2. Season your beef stew meat with salt and pepper, then brown the meat on all sides.
  3. Add the chopped onion and minced garlic, sautéing until soft and fragrant.
  4. Stir in the chopped green chiles, ground cumin, oregano, and pour in the beef broth.
  5. Bring the mixture to a boil, then lower the heat and let it simmer for 90 to 120 minutes, until the beef becomes incredibly tender.
  6. After the meat has cooked, adjust the seasoning to your preference.
  7. Serve hot, garnished with fresh cilantro.

Notes

For added creaminess, serve with a dollop of sour cream or avocado. Adjust your choice of chilies to match your heat preference.
