- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 teaspoon ground cumin
- 1 teaspoon oregano
- Salt and pepper, to taste
- 2 tablespoons vegetable oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium-high heat.
- Season your beef stew meat with salt and pepper, then brown the meat on all sides.
- Add the chopped onion and minced garlic, sautéing until soft and fragrant.
- Stir in the chopped green chiles, ground cumin, oregano, and pour in the beef broth.
- Bring the mixture to a boil, then lower the heat and let it simmer for 90 to 120 minutes, until the beef becomes incredibly tender.
- After the meat has cooked, adjust the seasoning to your preference.
- Serve hot, garnished with fresh cilantro.
