A warm and easy Mexican Casserole that combines ground beef, black beans, corn, salsa, and cheese for a hearty family meal.
Ingredients

- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup salsa
- 6 corn tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 teaspoon taco seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, brown the ground beef over medium heat. Drain excess fat, then add the taco seasoning, salt, and pepper.
- In a baking dish, layer half the tortillas, followed by half the beef mixture, half the beans, half the corn, half the salsa, and half the cheese.
- Repeat the layers until all ingredients are used, finishing with cheese on top.
- Bake for about 25-30 minutes, or until the cheese is melted and bubbly.
- Let cool for 5 minutes before serving.
Notes
Top with sour cream, diced avocado, or fresh cilantro as desired. This dish is perfect for meal prep and can be doubled for gatherings.
