- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 cup salsa
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Tortilla chips or flour tortillas for layering
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, chili powder, cumin, salt, and pepper.
- Grease a baking dish and layer some tortilla chips or tortillas on the bottom.
- Spread half of the chicken mixture over the chips.
- Sprinkle half of the cheese on top.
- Repeat the layers with the remaining chips, chicken mixture, and cheese.
- Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
