- 2 cups cooked chicken, shredded
- 1 cup salsa
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup cooked rice
- 1 packet taco seasoning
- 1/2 cup chopped bell peppers
- 1/2 cup chopped onion
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell peppers, and sauté until softened.
- In a large bowl, combine the shredded chicken, salsa, black beans, corn, cooked rice, taco seasoning, and sautéed vegetables.
- Transfer the mixture to a greased casserole dish and spread evenly.
- Top with shredded cheese.
- Bake in the preheated oven for 30 minutes, or until heated through and cheese is melted.
- Serve warm and enjoy!
Notes
You can customize this casserole by adding different vegetables or using rotisserie chicken for quicker preparation.
