- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup tortilla chips, crushed
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked chicken, black beans, corn, salsa, cumin, chili powder, salt, and pepper. Mix well.
- In a prepared baking dish, layer half of the crushed tortilla chips, followed by the chicken mixture.
- Sprinkle half of the cheese over the chicken layer.
- Add the remaining tortilla chips, followed by the remaining cheese.
- Bake in the preheated oven for 20-30 minutes, or until the cheese is melted and bubbly.
- Remove and serve hot.
