Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup tortilla chips, crushed
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, black beans, corn, salsa, cumin, chili powder, salt, and pepper. Mix well.
  3. In a prepared baking dish, layer half of the crushed tortilla chips, followed by the chicken mixture.
  4. Sprinkle half of the cheese over the chicken layer.
  5. Add the remaining tortilla chips, followed by the remaining cheese.
  6. Bake in the preheated oven for 20-30 minutes, or until the cheese is melted and bubbly.
  7. Remove and serve hot.
