Instructions
- Heat olive oil in a large skillet over medium heat. Add the ground beef, breaking it apart and cooking until browned.
- Add diced onions, garlic, and bell pepper to the skillet, stirring until softened—about 5 minutes.
- Toss in the diced potatoes and mix well with the beef and veggies.
- Add cumin, paprika, salt, and pepper. Stir well to coat everything.
- Pour in the diced tomatoes and let the mixture simmer covered for about 20-30 minutes, or until the potatoes are tender.
- Taste and adjust seasonings, then serve hot.
Notes
For extra flavor, consider adding a bay leaf while simmering. You can also use ground turkey for a leaner option.
