- 1 lb ground beef
- 2 medium potatoes, diced
- 1 can diced tomatoes (14 oz)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until translucent.
- Add the ground beef and cook until browned.
- Stir in diced potatoes, canned tomatoes, cumin, paprika, salt, and pepper.
- Cover and cook for about 15-20 minutes, or until the potatoes are tender.
- Serve with rice, tortillas, or use as filling for tacos and empanadas.
