  • 6 hard-boiled eggs
  • 4 slices of bacon (cooked and crumbled)
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • Salt and pepper to taste
  • Chopped chives or green onions (for garnish)

Instructions

  1. Carefully cut the hard-boiled eggs in half and remove the yolks.
  2. In a mixing bowl, mash the egg yolks until crumbly, then add the mayonnaise, Dijon mustard, white vinegar, salt, and pepper. Mix until smooth.
  3. Gently fold in the crumbled bacon, saving a few pieces for garnish.
  4. Spoon or pipe the yolk mixture back into the egg whites for a beautifully filled presentation.
  5. Top each with additional crumbled bacon and a sprinkle of chopped chives or green onions for flair.
