Ingredients

  • 4 slices of bacon
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon vinegar (white or apple cider)
  • Salt and pepper to taste

Instructions

  1. Hard boil the eggs by placing them in a pot of cold water, bringing it to a boil, and letting it sit covered off heat for 12 minutes.
  2. Cook the bacon over medium heat in a skillet until crispy. Drain on paper towels and crumble once cool.
  3. Peel the hard-boiled eggs, cut them in half, and remove the yolks into a bowl. Combine yolks with mayonnaise, Dijon mustard, vinegar, salt, and pepper, mixing until smooth.
  4. Refill the egg whites with the yolk mixture using a spoon or piping bag.
  5. Top with crumbled bacon and garnish with chives or paprika.
  6. Serve chilled or at room temperature.
