- 6 large eggs
- 4 slices of bacon
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon vinegar (white or apple cider)
- Salt and pepper to taste
- Chives or paprika for garnish
Instructions
- Hard boil the eggs by placing them in a pot of cold water, bringing it to a boil, and letting it sit covered off heat for 12 minutes.
- Cook the bacon over medium heat in a skillet until crispy. Drain on paper towels and crumble once cool.
- Peel the hard-boiled eggs, cut them in half, and remove the yolks into a bowl. Combine yolks with mayonnaise, Dijon mustard, vinegar, salt, and pepper, mixing until smooth.
- Refill the egg whites with the yolk mixture using a spoon or piping bag.
- Top with crumbled bacon and garnish with chives or paprika.
- Serve chilled or at room temperature.
