Description

A comforting and cheesy casserole featuring tender chicken and a buttery cracker topping, perfect for weeknight meals.


Ingredients

  • 4½ cups chopped cooked chicken
  • 4 oz cream cheese, room temperature
  • 1 cup cottage cheese
  • ½ cup sour cream
  • 1 (10.5-oz) can unsalted cream of chicken soup
  • ¼ tsp garlic powder
  • ¼ tsp dried onion powder
  • 1 sleeve Ritz crackers, crushed
  • 5 Tbsp butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chopped cooked chicken, cream cheese, cottage cheese, sour cream, cream of chicken soup, garlic powder, and dried onion powder. Mix thoroughly until creamy.
  3. Spread the chicken mixture evenly into a greased 9×13 inch baking dish.
  4. In a small bowl, mix crushed Ritz crackers with melted butter until evenly coated.
  5. Sprinkle the buttery cracker crumbs over the top of the chicken mixture.
  6. Bake for 30-35 minutes or until the topping is golden brown and the edges are bubbly.
  7. Remove from the oven and allow to cool for 5-10 minutes before serving.

Notes

For best results, ensure cream cheese is at room temperature. Feel free to add cooked broccoli or peas for extra veggies.
