Instructions
- Preheat your oven to 325°F (163°C).
- Mix together the graham cracker crumbs, sugar, and melted butter in a bowl until it resembles wet sand.
- Press the crumb mixture into the bottoms of cupcake liners in a muffin tin.
- In a separate mixing bowl, beat the softened cream cheese until smooth.
- Gradually add the powdered sugar and mix until fully incorporated.
- Stir in the vanilla extract and then add the eggs, mixing until just combined.
- Pour the cheesecake filling over the prepared crusts, filling each liner about two-thirds full.
