Instructions
- Prepare the Crust: In a mixing bowl, combine the all-purpose flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Press the mixture into mini muffin tins and pre-bake for about 10 minutes at 350°F (175°C).
- Make the Filling: In a separate bowl, whisk together the brown sugar, eggs, vanilla extract, and corn syrup until smooth. Stir in the chopped pecans until they are fully coated.
- Fill the Crusts: Once the crusts have cooled slightly, fill each one with the pecan filling up to the top.
- Bake: Return the filled pies to the oven and bake for an additional 20-25 minutes or until the filling is set and bubbly.
- Cool and Serve: Allow the mini pecan pies to cool completely in the tin before carefully removing them. Serve them warm or at room temperature.
