Ingredients

- 2 large sweet potatoes, peeled and cubed
- 1 can chickpeas, drained and rinsed
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cinnamon
- 4 cups vegetable broth
- Salt and pepper, to taste
- Optional: Roasted chickpeas for topping
Instructions
- In a large pot over medium heat, warm the olive oil.
- Add the chopped onion and minced garlic. Sauté until soft and fragrant.
- Stir in cumin, coriander, paprika, and cinnamon; cook for another minute.
- Add cubed sweet potatoes and rinsed chickpeas, then pour in the vegetable broth.
- Bring to a boil, then reduce heat and let simmer until sweet potatoes are tender, about 20 minutes.
- Blend the soup until smooth, adding more broth if too thick.
- Season with salt and pepper, and serve hot.
Notes
Serve with roasted chickpeas on top for added crunch and pair with crusty bread or a salad.
