Description

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 can chickpeas, drained and rinsed
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 4 cups vegetable broth
  • Salt and pepper, to taste
  • Optional: Roasted chickpeas for topping

Instructions

  1. In a large pot over medium heat, warm the olive oil.
  2. Add the chopped onion and minced garlic. Sauté until soft and fragrant.
  3. Stir in cumin, coriander, paprika, and cinnamon; cook for another minute.
  4. Add cubed sweet potatoes and rinsed chickpeas, then pour in the vegetable broth.
  5. Bring to a boil, then reduce heat and let simmer until sweet potatoes are tender, about 20 minutes.
  6. Blend the soup until smooth, adding more broth if too thick.
  7. Season with salt and pepper, and serve hot.

Notes

Serve with roasted chickpeas on top for added crunch and pair with crusty bread or a salad.
