Description

Delicious and creamy spaghetti with sautéed zucchini and Parmesan, inspired by the Amalfi Coast of Italy.


Ingredients

  • 400g Spaghetti
  • 2 medium Zucchini, sliced
  • Freshly grated Parmesan cheese, for creaminess and topping
  • 34 tablespoons Olive oil, for sautéing
  • 23 cloves Garlic, minced
  • Salt, to taste
  • Pepper, freshly ground, to taste
  • A handful of Fresh basil, shredded for garnish

Instructions

  1. Cook spaghetti according to package instructions until al dente, reserving a cup of pasta water before draining.
  2. In a large skillet over medium heat, add the olive oil. Once hot, add the sliced zucchini and cook until golden brown and tender, about 5-7 minutes.
  3. Add the minced garlic and sauté for about a minute until fragrant, being careful not to burn it.
  4. Add the drained spaghetti to the skillet and toss everything well.
  5. Gradually mix in the grated Parmesan cheese and a splash of reserved pasta water until a creamy sauce forms, adding more pasta water if needed.
  6. Season with salt and freshly cracked pepper, then fold in the shredded basil.
  7. Serve hot, topped with additional Parmesan if desired.

Notes

Pair with a crisp salad or garlic bread; for added protein, consider grilled chicken or shrimp.
