Description
Delicious and creamy spaghetti with sautéed zucchini and Parmesan, inspired by the Amalfi Coast of Italy.
Ingredients

- 400g Spaghetti
- 2 medium Zucchini, sliced
- Freshly grated Parmesan cheese, for creaminess and topping
- 3–4 tablespoons Olive oil, for sautéing
- 2–3 cloves Garlic, minced
- Salt, to taste
- Pepper, freshly ground, to taste
- A handful of Fresh basil, shredded for garnish
Instructions
- Cook spaghetti according to package instructions until al dente, reserving a cup of pasta water before draining.
- In a large skillet over medium heat, add the olive oil. Once hot, add the sliced zucchini and cook until golden brown and tender, about 5-7 minutes.
- Add the minced garlic and sauté for about a minute until fragrant, being careful not to burn it.
- Add the drained spaghetti to the skillet and toss everything well.
- Gradually mix in the grated Parmesan cheese and a splash of reserved pasta water until a creamy sauce forms, adding more pasta water if needed.
- Season with salt and freshly cracked pepper, then fold in the shredded basil.
- Serve hot, topped with additional Parmesan if desired.

Pair with a crisp salad or garlic bread; for added protein, consider grilled chicken or shrimp.
