- 2 cups mixed dried fruits (raisins, cranberries, apricots)
- 1 cup chopped nuts (walnuts or pecans)
- 1 cup unsalted butter (softened)
- 2 cups granulated sugar
- 4 large eggs
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1/2 cup orange juice
- 1/4 cup brandy or rum (optional)
Instructions
- Preheat your oven to 325°F (160°C).
- Cream the softened butter and granulated sugar together until light and fluffy.
- Add the eggs one by one, mixing thoroughly after each addition.
- In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually combine dry ingredients with the wet mixture, alternating with the orange juice until well integrated.
- Gently fold in the dried fruits and nuts until evenly distributed.
- Grease and line a 9×5-inch loaf pan with parchment paper.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 60-75 minutes, or until a toothpick comes out clean.
Notes
For enhanced flavor, soak dried fruits in orange juice or alcohol for a few hours or overnight.
