A deliciously simple dessert that captures the essence of a classic chocolate eclair without needing an oven.
Ingredients

- 14.4 oz box of graham crackers
- 2 (3.4 oz) packages of instant vanilla pudding
- 3 cups of milk
- 1 (8 oz) tub of whipped topping (such as Cool Whip)
- 1 (16 oz) can of chocolate frosting
Instructions
- In a mixing bowl, whisk together instant pudding and milk. Let it sit for about 3-5 minutes until it thickens.
- Gently fold in the whipped topping until fully combined.
- Lightly spray a 9 x 13 inch glass pan with nonstick cooking spray.
- Arrange a layer of whole graham crackers on the bottom of the pan.
- Spread half of the pudding mixture over the graham crackers.
- Layer another set of graham crackers over the pudding.
- Spread the remaining pudding mixture over this layer.
- Top with one final layer of graham crackers.
- Remove the lid and foil liner from the chocolate frosting and microwave it for about 10-12 seconds. Stir until it becomes easier to spread.
- Spread the chocolate frosting over the top layer of graham crackers.
- Cover and refrigerate for 4 to 6 hours.
- Slice into 12 pieces and serve cold.
Notes
For best results, let the cake chill overnight in the fridge. You can also substitute chocolate pudding for a richer flavor.
