Description

A comforting, creamy potato soup perfect for chilly evenings, flavorful and easy to make.


Ingredients

  • 4 large potatoes, peeled and diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream or milk (for a lighter version, use low-fat milk)
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Heat a splash of oil in a large pot over medium heat. Sauté the chopped onions until they become translucent.
  2. Toss in the diced potatoes, carrots, and celery. Stir together to combine.
  3. Pour in the vegetable broth and bring to a boil.
  4. Reduce heat to a simmer and cook for about 30 minutes, until vegetables are tender.
  5. Use an immersion blender to blend the soup until smooth.
  6. Stir in the heavy cream and season with salt and pepper. Heat through.
  7. Serve warm, garnished with fresh herbs if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. For longer storage, freeze but add cream when reheating.
