Ingredients

- 4 large potatoes, peeled and diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 4 cups vegetable broth
- 1 cup heavy cream or milk (for a lighter version, use low-fat milk)
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Heat a splash of oil in a large pot over medium heat. Sauté the chopped onions until they become translucent.
- Toss in the diced potatoes, carrots, and celery. Stir together to combine.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat to a simmer and cook for about 30 minutes, until vegetables are tender.
- Use an immersion blender to blend the soup until smooth.
- Stir in the heavy cream and season with salt and pepper. Heat through.
- Serve warm, garnished with fresh herbs if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 3-4 days. For longer storage, freeze but add cream when reheating.
