Ingredients

  • 1 tablespoon fresh ginger, grated
  • 3 cups fresh pumpkin, peeled and cubed
  • 2 medium chicken breasts, diced or shredded
  • 1½ cups mushrooms, sliced
  • 1½ cups sweet corn (canned, frozen, or fresh)
  • 4 cups chicken broth
  • 1 cup coconut milk (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon chili flakes (optional)
  • Salt and black pepper, to taste
  • Fresh coriander or parsley, to garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté for about 3–4 minutes until soft. Stir in garlic and ginger, cooking until fragrant.
  2. Toss in the cubed pumpkin, cumin, paprika, chili flakes (if using), salt, and pepper. Let it cook for 5–6 minutes to meld the flavors.
  3. Mix in the diced or shredded chicken and mushroom slices, cooking for another 5 minutes until the chicken is lightly browned.
  4. Add the chicken broth, bringing the mixture to a gentle boil. Reduce the heat and let it simmer for about 20 minutes, or until the pumpkin is tender and the chicken is cooked through.
  5. Stir in the sweet corn and coconut milk (if using), allowing it to gently simmer for an additional 5 minutes.
  6. For a creamier texture, use an immersion blender to blend part of the soup, keeping some chunks for added heartiness.
  7. Finish by garnishing with fresh coriander or parsley. Serve hot alongside crusty bread or a fresh salad.

Notes

Consider pairing with artisan bread or grilled cheese. For enhanced flavor, sprinkle roasted pumpkin seeds on top.
