Ingredients

- 1 cup diced fish (such as cod or tilapia)
- 1 cup diced vegetables (carrots, celery, and onion)
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh herbs (such as parsley or dill)
- Juice of 1 lemon
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced vegetables and garlic, and sauté until softened.
- Pour in the fish stock and bring to a simmer.
- Add the diced fish, salt, and pepper. Cook until the fish is opaque and flaky, about 5-7 minutes.
- Stir in fresh herbs and lemon juice before serving.
Notes
For a thicker soup, blend a portion and return it to the pot. Use fresh, wild-caught fish for the best flavor.
