Ingredients

  • 1 cup diced fish (such as cod or tilapia)
  • 1 cup diced vegetables (carrots, celery, and onion)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh herbs (such as parsley or dill)
  • Juice of 1 lemon

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced vegetables and garlic, and sauté until softened.
  3. Pour in the fish stock and bring to a simmer.
  4. Add the diced fish, salt, and pepper. Cook until the fish is opaque and flaky, about 5-7 minutes.
  5. Stir in fresh herbs and lemon juice before serving.

Notes

For a thicker soup, blend a portion and return it to the pot. Use fresh, wild-caught fish for the best flavor.
