  • 2 eggs
  • ¼ cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¼ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, whisk together the eggs, milk, maple syrup (or honey), and vanilla extract until well combined.
  3. Stir in the oats, baking powder, cinnamon, and salt until the mixture is evenly mixed.
  4. Gently fold in the diced apples and nuts if you’re using them.
  5. Pour the oat mixture into the greased baking dish, spreading it out evenly.
  6. Bake for 30-35 minutes, or until the top is golden brown and the center feels set.
  7. Allow the bake to cool for 5 minutes before serving.
