Instructions

  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture until well combined.
  6. Fold in the oats until evenly distributed.
  7. Drop spoonfuls of cookie dough onto baking sheets lined with parchment paper.

  10. While cookies cool, whip heavy cream until soft peaks form, then gradually add powdered sugar and whip to stiff peaks.
