- 1 tablespoon Dijon mustard
- 1 cup sour cream
- 2 tablespoons all-purpose flour
- 2 tablespoons butter
- 1 tablespoon olive oil

Instructions
- Prepare the Beef: Cut the beef into thin strips against the grain for maximum tenderness. Season lightly with salt and pepper, then dust with flour to aid in browning and thickening the sauce.
- Sauté the Base: In a large skillet, heat the butter and olive oil over medium heat. Add the sliced mushrooms and onions, cooking until they are soft and golden brown.
- Brown the Beef: Migrate the mushroom and onion to the sides of the skillet and add the beef in the center. Sear for just a couple of minutes until browned but not cooked through.
- Add Flavor: Stir in the minced garlic, then pour in the beef broth and mix in the Dijon mustard. Let this simmer to blend the flavors.
- Crème Finish: Remove from heat and gently stir in the sour cream until the sauce is smooth. Season with salt and pepper to taste.
