  • 1 tablespoon Dijon mustard
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 1 tablespoon olive oil

Instructions

  1. Prepare the Beef: Cut the beef into thin strips against the grain for maximum tenderness. Season lightly with salt and pepper, then dust with flour to aid in browning and thickening the sauce.
  2. Sauté the Base: In a large skillet, heat the butter and olive oil over medium heat. Add the sliced mushrooms and onions, cooking until they are soft and golden brown.
  3. Brown the Beef: Migrate the mushroom and onion to the sides of the skillet and add the beef in the center. Sear for just a couple of minutes until browned but not cooked through.
  4. Add Flavor: Stir in the minced garlic, then pour in the beef broth and mix in the Dijon mustard. Let this simmer to blend the flavors.
  5. Crème Finish: Remove from heat and gently stir in the sour cream until the sauce is smooth. Season with salt and pepper to taste.
