Description
A delicious one-pan meal that combines succulent chicken, flavorful rice, and a medley of vegetables with a sweet and tangy honey BBQ sauce.

- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice (basmati or jasmine)
- 2 cups chicken broth
- ½ cup BBQ sauce
- ¼ cup honey
- 1 cup mixed vegetables
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- Salt and pepper to taste
Instructions
- Season your chicken and sear it in a large skillet over medium heat for about 5 minutes on each side until browned.
- Whisk together the BBQ sauce and honey in a small bowl.
- Pour the BBQ-honey mixture over the chicken.
- Add the rice and chicken broth to the skillet; stir to combine.
- Bring the contents to a simmer; cover and reduce heat, cooking on low for about 20 minutes, until the rice is tender.
- Place the mixed vegetables on top of the rice during the last 5 minutes of cooking to steam.
- Let the skillet sit for 5 minutes before fluffing the rice with a fork. Serve warm!
Notes
Make sure the skillet is hot enough to obtain a good sear on the chicken. You can use pre-cooked chicken for quicker preparation.
