One-Pan Bold Honey BBQ Chicken Rice

Description

A delicious one-pan meal that combines succulent chicken, flavorful rice, and a medley of vegetables with a sweet and tangy honey BBQ sauce.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice (basmati or jasmine)
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Season your chicken and sear it in a large skillet over medium heat for about 5 minutes on each side until browned.
  2. Whisk together the BBQ sauce and honey in a small bowl.
  3. Pour the BBQ-honey mixture over the chicken.
  4. Add the rice and chicken broth to the skillet; stir to combine.
  5. Bring the contents to a simmer; cover and reduce heat, cooking on low for about 20 minutes, until the rice is tender.
  6. Place the mixed vegetables on top of the rice during the last 5 minutes of cooking to steam.
  7. Let the skillet sit for 5 minutes before fluffing the rice with a fork. Serve warm!

Notes

Make sure the skillet is hot enough to obtain a good sear on the chicken. You can use pre-cooked chicken for quicker preparation.
