Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Season your chicken with salt, pepper, garlic powder, onion powder, and smoked paprika.
  2. Sear for about 5 minutes on each side until golden brown.
  3. Whisk together the BBQ sauce and honey in a small bowl.
  4. Pour the mixture over the seared chicken.
  5. Add in the long-grain rice along with the chicken broth.
  6. Stir to combine all the ingredients.
  7. Bring the entire mixture to a simmer, cover, and cook on low heat for about 20 minutes.
  8. Layer your mixed vegetables on top during the last 5 minutes of cooking.
  9. Let the dish sit for 5 minutes, then fluff the rice with a fork and serve hot.

Notes

Feel free to substitute chicken breast with thighs for a juicier bite! You can also switch out the mixed vegetables based on your preference.
