- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- ½ cup BBQ sauce
- ¼ cup honey
- 1 cup mixed vegetables (frozen or fresh)
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- Salt and pepper to taste
Instructions
- Season your chicken with salt, pepper, garlic powder, onion powder, and smoked paprika.
- Sear for about 5 minutes on each side until golden brown.
- Whisk together the BBQ sauce and honey in a small bowl.
- Pour the mixture over the seared chicken.
- Add in the long-grain rice along with the chicken broth.
- Stir to combine all the ingredients.
- Bring the entire mixture to a simmer, cover, and cook on low heat for about 20 minutes.
- Layer your mixed vegetables on top during the last 5 minutes of cooking.
- Let the dish sit for 5 minutes, then fluff the rice with a fork and serve hot.
Notes
Feel free to substitute chicken breast with thighs for a juicier bite! You can also switch out the mixed vegetables based on your preference.
