One-Pan Cowboy Butter Tortellini Steak Bites

Description

A delightful fusion of steak bites and cheese tortellini in a savory garlic-infused cowboy butter sauce, easy to prepare and perfect for any occasion.


Ingredients

  • 1 ½ lbs sirloin or ribeye steak, cut into bite-sized cubes
  • 1 tsp Cajun seasoning (or to taste)
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • Salt & black pepper, to taste
  • 2 tbsp olive oil
  • 6 tbsp unsalted butter
  • 4 cloves garlic, minced
  • ½ tsp red pepper flakes (optional, for heat)
  • 1 tsp Dijon mustard
  • Juice of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 12 oz cheese tortellini (fresh or refrigerated)
  • ½ cup grated Parmesan cheese
  • ½ cup reserved pasta water

Instructions

  1. Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions until tender but still firm. Reserve ½ cup of the pasta water, then drain and set aside.
  2. While the tortellini is cooking, pat the steak pieces dry using paper towels. Season the steak bites with Cajun seasoning, smoked paprika, garlic powder, salt, and black pepper.
  3. In a large skillet over medium-high heat, heat olive oil. Sear the steak bites for 2–3 minutes on each side until browned and cooked to your desired doneness. Remove the steak from the skillet and allow it to rest.
  4. Reduce the heat to medium. In the same skillet, melt the butter and add the minced garlic. Cook for about 1 minute until fragrant.
  5. Stir in the red pepper flakes, Dijon mustard, and lemon juice. Add the chopped parsley and chives, mixing well.
  6. Return the cooked tortellini and steak bites to the skillet. Toss everything until coated with the cowboy butter sauce. Use reserved pasta water as needed for a silky consistency. Stir in grated Parmesan until melted and creamy.

Notes

Serve hot topped with extra Parmesan, parsley, and Cajun seasoning. Pairs well with a garden salad or steamed green beans.
