A creamy, spicy pasta dish combining smoked sausage and penne for a quick and flavorful meal in one pot.

- 1 lb smoked sausage (sliced)
- 12 oz penne pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 medium onion (chopped)
- 1 bell pepper (chopped)
- 3 cloves garlic (minced)
- 1 can (14.5 oz) diced tomatoes (drained)
- 1 tbsp Cajun seasoning
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup grated Parmesan cheese (for garnish)
- 2 tbsp olive oil
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the sliced sausage, chopped onion, and bell pepper. Sauté until browned, about 5-7 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Mix in the drained diced tomatoes, chicken broth, heavy cream, Cajun seasoning, paprika, salt, and pepper. Bring this mixture to a boil.
- Once boiling, add the uncooked penne pasta. Lower the heat and simmer, stirring occasionally for about 10-12 minutes, or until the pasta is tender.
- Remove from heat and stir in the grated Parmesan cheese until melted.
Notes
Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. Reheat on the stovetop or in the microwave, adding a splash of broth or cream to revitalize the sauce. Freezing is possible for up to two months.
