- 1 cup orzo pasta
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 1 cup spinach, chopped
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- Sauté Aromatics: In a large pot, heat a splash of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened.
- Brown the Turkey: Add the ground turkey to the pot, cooking until it’s well browned.
- Add Ingredients: Stir in the diced tomatoes, chicken broth, orzo, and Italian seasoning. Mix well and bring to a boil.
- Simmer: Once boiling, reduce the heat and let it simmer for about 10-12 minutes, or until the orzo is cooked al dente.
- Final Touches: Stir in the chopped spinach and cook until wilted. Season with salt and pepper to taste before serving.
Notes
Feel free to substitute the spinach with kale or Swiss chard if preferred. For an extra protein boost, consider adding cooked beans.
