Description

Ingredients

  • 14 oz kielbasa sausage, sliced
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 2 cups low sodium chicken broth
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1 1/2 cups shredded cheddar or mozzarella cheese
  • Salt and pepper to taste
  • 1/2 tsp smoked paprika (optional)
  • Fresh parsley for garnish
  • Optional add-ins: spinach, peas, bell peppers, or red pepper flakes

Instructions

  1. Heat olive oil: In a large pot, warm the olive oil over medium heat.
  2. Cook kielbasa: Add sliced kielbasa and sauté for 4–5 minutes until nicely browned.
  3. Sauté aromatics: Incorporate minced garlic and chopped onion, cooking for about 2 minutes until fragrant and translucent.
  4. Simmer the base: Pour in the chicken broth and heavy cream, bringing the mixture to a light simmer.
  5. Add pasta: Stir in the pasta, cover the pot, and let it simmer for 10–12 minutes, stirring occasionally until the pasta is al dente.
  6. Melt the cheeses: Stir in grated Parmesan cheese until it’s melted and creamy, then add shredded cheddar or mozzarella, mixing until melted.
  7. Season and serve: Adjust flavors with salt, pepper, and smoked paprika if desired. Garnish with parsley and serve hot!

Notes

For added richness, top with extra Parmesan. Serve with a side salad or garlic bread.
