- 1 tbsp olive oil
- 14 oz kielbasa sausage, sliced
- 3 cloves garlic, minced
- 1 small onion, chopped
- 2 cups low sodium chicken broth
- 1 cup heavy cream
- 3/4 cup grated Parmesan cheese
- 1 1/2 cups shredded cheddar or mozzarella cheese
- Salt and pepper to taste
- 1/2 tsp smoked paprika (optional)
- Fresh parsley for garnish
- Optional add-ins: spinach, peas, bell peppers, or red pepper flakes
Instructions
- Heat olive oil: In a large pot, warm the olive oil over medium heat.
- Cook kielbasa: Add sliced kielbasa and sauté for 4–5 minutes until nicely browned.
- Sauté aromatics: Incorporate minced garlic and chopped onion, cooking for about 2 minutes until fragrant and translucent.
- Simmer the base: Pour in the chicken broth and heavy cream, bringing the mixture to a light simmer.
- Add pasta: Stir in the pasta, cover the pot, and let it simmer for 10–12 minutes, stirring occasionally until the pasta is al dente.
- Melt the cheeses: Stir in grated Parmesan cheese until it’s melted and creamy, then add shredded cheddar or mozzarella, mixing until melted.
- Season and serve: Adjust flavors with salt, pepper, and smoked paprika if desired. Garnish with parsley and serve hot!
Notes
For added richness, top with extra Parmesan. Serve with a side salad or garlic bread.
