Ingredients

  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup orange juice
  • 1 tablespoon orange zest
  • 2 large eggs
  • 1 cup fresh or dried cranberries
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons orange juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, combine flour, sugar, baking powder, and salt. Mix until well combined.
  3. In another bowl, whisk together melted butter, orange juice, orange zest, and eggs until smooth.
  4. Pour wet ingredients into dry ingredients. Stir gently until just combined; it’s okay if there are a few lumps.
  5. Gently fold in cranberries, being careful not to overmix.
  6. Transfer batter to the prepared loaf pan and bake for 60-70 minutes, or until a toothpick comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack.
  8. For the glaze, whisk together powdered sugar and orange juice until smooth and drizzle over the cooled bread before serving.

Notes

For a healthier option, swap half of the all-purpose flour with whole wheat flour or use a sugar substitute for the glaze. Store wrapped at room temperature for up to 3 days or freeze for longer.
