- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 cup orange juice
- 1 tablespoon orange zest
- 2 large eggs
- 1 cup fresh or dried cranberries
- 1 cup powdered sugar (for glaze)
- 2 tablespoons orange juice (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large mixing bowl, combine flour, sugar, baking powder, and salt. Mix until well combined.
- In another bowl, whisk together melted butter, orange juice, orange zest, and eggs until smooth.
- Pour wet ingredients into dry ingredients. Stir gently until just combined; it’s okay if there are a few lumps.
- Gently fold in cranberries, being careful not to overmix.
- Transfer batter to the prepared loaf pan and bake for 60-70 minutes, or until a toothpick comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack.
- For the glaze, whisk together powdered sugar and orange juice until smooth and drizzle over the cooled bread before serving.
Notes
For a healthier option, swap half of the all-purpose flour with whole wheat flour or use a sugar substitute for the glaze. Store wrapped at room temperature for up to 3 days or freeze for longer.
